Apricot Bars
Ingredients:
2 cups dried apricots [order here]
1/2 cup margarine or butter
1/2 cup granulated sugar [order here]
2 1/2 cups Bisquick [order here]
2 cups packed brown sugar [order here]
4 beaten eggs
1 teaspoon vanilla
1 cup chopped nuts [Walnuts] or [Pecan Nuts]

Directions:
Preheat oven to 350 degrees (175 C). Place apricots in a saucepan and add enough water to cover them. Heat to boiling, then reduce the heat and simmer uncovered for 10 minutes. Cool and chop.

Cut the butter into granulated sugar and 2 1/2 cups Bisquick until crumbly. Pat down into a cookie sheet (about 15 1/2 by 10 1/2 by 1 inch).

Bake for 10 minutes. Beat the brown sugar and eggs together, then stir in the apricots, 2/3 cup Bisquick, vanilla, and nuts. Spread over the baked layer, then bake for 30 minutes. Cool completely, then cut into bars.
