| Tuna Casserole |
| Ingredients: |
1 tbsp canola oil
1 cup cooked pasta (shells are best, but spirals or macaroni works too)
1 medium chopped onion
1 can cream of mushroom soup (can use 98% reduced fat)
1 cup water
2 tbsp flour
2 cups frozen mixed vegetables (thawed)
1 can flaked white tuna, drained
4 hard boiled eggs
salt & pepper to taste
bread crumbs |
| Directions: |
Fry onions in a large skillet over medium heat. Cook until onions are soft. Add soup, water, and flour, stir until thickened. Add vegetables, tuna, eggs, and cooked pasta. Taste, and add salt and pepper. Place in a greased 1 1/2 quart casserole dish. Cover with crumbs and bake in a 350C oven for 30 minutes. Serves 4 to 6. Freezes well.
