| Russian Soup / Stew |
| For those of you who have never tried beets, a good first recipe is borscht, a Russian soup or stew. It really is delicious...every child I have served it to has eaten it and asked for more. |

| Ingredients and Directions |
Brown 300 grams beef or pork in vegetable oil.
Add 2-3 cloves chopped garlic and 1sliced onions.
Saute until soft. Add 1 cup each, grated carrots and cabbage, add enough water to cover, add 2 beef bouillon cubes, simmer until everything is soft, 30 minutes or longer.
After cabbage is soft, add drained beets and simmer another 10-15 minutes.
Add 1 tsp dry dill.
Adjust seasoning--salt and/or pepper--to taste.
Serve hot over rice or alone as soup with some crusty French bread.
Garnish with plain yogurt or real sour cream.
A great dish for cold, rainy days.
